My breakfast burritos that the husband absolutely loved!

If its my own recipe it sure is easy to make!

one medim sized boiled sliced potato
half a red onion - sliced
bay leaves or curry leaves – 2 to 3
three small green chillies chopped – 3 to 4
salt and pepper for seasoning
three tbps canola or olive oil – because its healthier
mayonnaise – optional
two to three eggs boiled and sliced
a little green onions finely sliced
a little cilantro
half a chopped tomato: optional
four tortillas or paratas

Saute the onions in a medium sized saucepan with green chillies bay leaves and seasoning.
When onions are cooked but not discolored, add the boiled potatoes and mix well.
Add green onions, mayonnaise and eggs when potatoes are cooking and stir
More salt and pepper could be added at this point if necessary
Finally add the tomatoes and cilantro and stir

Roll or wrap up your filling in warm tortillas and you are ready go!
Optional - You could either bake it up a little of slightly roast on a skillet if you like it crispy.
